The clouds and mist environment, known as
yun-wu
in China, is the perfect place to grow tea. This tea comes from Drum Mountain, the same fabled site where the 19th century tea explorer, Sir Robert Fortune, discovered many fine teas. The tea plant, known locally as
Mei Tsan,
is a very slow growing, high quality varietal. The tawny liquor has a pleasing flavor, rich finish and a lingering, sweet aftertaste. It is easy to brew and doesn't become bitter from oversteeping. The tea is at its best with water temperature below boiling, and the leaves are good for several infusions.
