Mengding in Sichuan province is so well known for its teas that it now has its own tea festival, and in the central part of the county there are single-person cable cars that take you over the tea gardens. It takes approximately 80,000 tea leaf buds to make about 500g of the final tea product. This early spring tea is lightly oxidized, and infuses a pale golden liquor with a pleasing mild flavor. Use 1 teaspoon (3g) dried leaves per 6 ounces spring water heated to 175-185°F, steeping 3-4 minutes. This tea is good for multiple infusions by increasing the duration of each subsequent steeping.
