From China's Fujian province, Golden Monkey is a very playful tea with lots of character and a wonderful aroma. It's not easy to find a high quality black tea (called red tea in China). Most are mass produced commercially on large farms. This is a good example of one picked and made with great care. It's a first flush early-picked spring tea and production is limited. Use 1 generous tsp. dried leaf (3-4g) per 6-ounce cup of spring water heated to just below boiling (212°). Pour hot water over leaves and steep 4 minutes.
