Formosan Oolong Teas
Oolong, or black-dragon tea, is fermented to varying degrees after picking;
the fermentation is then stopped by roasting of the leaves, which accounts for the darker color and more robust flavor.
The taste is somewhat fruity, with a bouquet that has a spicy hint. In Taiwan, oolong is considered the top blend.
Brew in water temperature of 158°-185°F for one to three minutes.
