Chè Sen (Lotus Tea)

This lotus tea from Vietnam's Central Highlands is truly the tea of the Emperors with an anise, incensy bouquet. It is scented with the flowers and inner seeds of the exquisitely fragrant lotus blossom. During the evening, the lotus flower bud is carefully opened and a few grams of perfect Bác Thái or Bao Lôc tea leaves are inserted. Then the petals are gently closed. Use spring water at a temperature well below boiling.
