Black teas are f ull-flavored and dark. The freshly plucked leaves are withered to remove moisture then
twisted and rolled to release enzymes. Oxidation, also known as fermentation, changes the
chemical structure and allows flavor characteristics to emerge. The leaves are then fired to halt
fermentation.
Kenya Marinyn
This quality tea is grown in
the Kenyan highlands, an extensive area covering both sides of the Rift
Valley between Mount Kenya and Lake Victoria. These highlands range in altitude
from 5,000 to 9,000 feet and enjoy copious rainfall. Kenya Malima has small, fine
reddish-black leaves and brews dark and hearty, with a sort of sweetness to the
fragrance and flavor. Steep at a water temperature just below boiling.

Sri Lanka or Ceylon is situated in the Indian Ocean at the
southern tip of the Indian peninsula. Tea was first planted in Sri Lanka in the year 1840. Ever since then
Sri Lanka or Ceylon has been a producer of some of the world's finest teas. Sri Lanka is one of the largest
tea producing countries in the world besides India and China.
Kenilworth OP
The tea estate Kenilworth produces teas known as "mid-country" teas, grown at 3,500 feet.
They are renowned for their rich, coloury liquor and strength. The OP
leaves are fancy, long rolled and wiry with a distinctive flavor unique
to this estate. Even adjacent gardens blessed with the same climate cannot
product the same flavor and liquor. Enjoyable anytime, we particularly
recommend Kenilworth for the morning, when the virtues of a good strong
full-bodied cup of tea are especially appreciated. Steep at a water
temperature just below boiling.

Black teas in China are grown in the Anhui, Fujian and Hunnan provinces.
The most prominent black teas from China are Keemun and Yunnan. Keemun teas are from the Anhui province. Keemuns are known to
have an orchid rose-like aroma and they are known as the "King of Red Teas." Teas from Yunnan are more like Assam -- full
bodied. But the flavor of Yunnan teas are distinctly different than the ones from Assam.
Yunnan FOP (Dianbong)
The "yun" in Yunnan
means "cloud" and most tea there is raised at elevations of 3,000 to 7,000
feet. Yunnan FOP consists of the orange pekoe leaves accompanied by a
profusion of fat golden buds. It is a brisk, large-leaf tea characterized
by its aromatic and spicy flavor, and rich, reddish-orange liquor. It is
comparable to Assam in flavor. Steep at a water temperature just below
boiling.

and renowned for a dark red liquor with an orchid- or rose-like fragrance.
It makes an excellent "English Breakfast" and is useful for iced tea since

Black Sea Anemone (Hong Mudan)
We call this one Black Sea Anemone
because that's just what it looks like after steeping. It is a "display" tea.
It is meant to be enjoyed not only for its taste, but for its appearance as
well. This tea is made from quality spring-picked leaves, then hand-tied
into beautiful rosettes. This tea is from Yunnan province on a remote
mountain where virtually every family grows tea. It is a fool-proof tea to
prepare. Simply place an entire rosette in a glass, add hot water and enjoy.
An 8-12 oz. wineglass will show the tea at its best, and is ideal for savoring
its sweet and delicate taste. Black Sea Anemone can be enjoyed throughout
a meal, simply adding additional hot water as needed. It won't become bitter
from over-steeping, even after several hours of infusion.

India is one of the world's largest producers of tea. It has over
13,000 gardens which employ 2 million people, producing approximately 30 percent of the world's black
tea. India's major tea-growing areas are Assam, Darjeeling and Nilgiri.
Nilgiri Havukal Estate
The Nilgiris, or Blue Mountains, are a stunningly beautiful
range of hills that stretch down the southwestern tip of India from the state of Kerala to the state of Tamil Nadu.
At a height of about 4,500 feet and with approximately 80 inches of rain a year, it is the perfect environment for
tea cultivation. Havukal Estate produces a fine flavory tea with bright, brisk liquor and a smooth rounded mellow
flavor. Drink it all day with a little milk, steeping at a water temperature just below boiling.

Burnside Estate Frost Tea
Originally called "Lucky Valley" when it was opened up and planted in the 1920s by
J. L. H. Stisted, this Nilgiri hills estate ranging in elevation from 5,100 feet to over 6,100 feet was later sold to a Mr. Burnside and passed through other hands
before being acquired by the present ownership in 1993. The estate successfully controls all pests and diseases with 100%
bio-dynamic natural products as per international standards. Burnside Estate Frost has very long, wiry, well-rolled leaves
showing even wither and a high proportion of bud. The infused leaf is greenish and coppery, and yields a light yellow liquor with

Havukal Estate Frost SFTGBOP
Nilgiri's Havukal estate shares the same valley as Kairbetta, its neighbor on slightly higher
slopes. It comprises approximately 150 hectares, most planted between 1910 and 1920 by British pioneer Hugh Graham Fennell
who set out Assam plants exclusively. In 1957 Fennell sold the estate to the present owner, Mr. Thangavelu. Especially
plucked at one leaf and a bud (instead of two leaves and a bud), the leaf of this SFTGBOP ("special fancy tippy golden broken orange
pekoe") is greenish with some tip, and yields a light-bodied, puckery, elegant flavor and flamboyant aroma. Steep at a

Gopaldhara Special Darjeeling, First and Second Flush
Grown in the Mirik region of the Darjeeling valley, this silver-tipped
Gopaldhara is aromatic in the dry leaf. It yields a rich, sapid brew with a smooth finish that lies full on the tongue,
and can handle multiple infusions. This is as close as we've come to a "bottomless" cup of tea; the flavor is exquisite
pot after pot, steeping after steeping. Steep at a water temperature just below boiling.

Nepali black tea is recognized worldwide
for its outstanding aroma and brisk flavor. The cool breezes from the refreshing
Himalayan range and young tea bushes also contribute to the quality of Nepali tea.
The area under tea cultivation is estimated to be about 16 thousand hectares of land
comprising more than 85 tea estates. There are more than 7,500 small farmers involved
in tea cultivation in different parts of the country, though most are concentrated in
eastern Nepal.
Nepal Organic Kenchajanga Black
The Kenchajanga tea
garden is the first farmers cooperative tea estate covering nearly 94 hectars of land, lying at 1,300 to 1,800 meters in the
foot hills of Mt. Kanchenjunga, which abuts the Darjeeling district in nearby India. The garden produces this high
quality organic tea of the Himalayas. Fragrant in the dry leaf, the golden brown tea liquor has
a spicy rich flavor with smooth finish. Steep at a water temperature just below boiling for
three to six minutes.

Our Vietnamese black tea is from Ha Giang,
a major border province with grandiose landscapes and ethnic minority cultural
traditions. The aroma of tea trees from vast tea fields overwhelms the senses.
The higher one wanders up the mountain paths, the bigger and older the tea trees
become. They have a fragrant and delicious taste and provide a high yield crop without using chemical fertilizers and insecticides.
Shan "Tràn Phú (Tuyét)"
This very unusual silver-tipped
tea is known as "Shan" (mountain) tea, from the ancestral home of the tea plant itself.
The leaves are picked from ancient tea trees along the Vietnamese and Chinese
border standing 6 to 7 meters tall and aged from 100 to 300 years old.
Steep at a water temperature just below boiling.
