Black Teas

Black teas are f ull-flavored and dark. The freshly plucked leaves are withered to remove moisture then twisted and rolled to release enzymes. Oxidation, also known as fermentation, changes the chemical structure and allows flavor characteristics to emerge. The leaves are then fired to halt fermentation.
