African Green Tea

Green teas from Africa are widely consumed and traditionally associated with numerous health benefits which can be attributed to their significantly high flavonoid content, similar to polyphenols. Animal trials using African green tea over a six-week study period demonstrate significantly lower serum and liver cholesterol (30% and 15%, respectively), as well as increased serum HDL cholesterol (30%).

China Green Teas

China is the birthplace of tea. It was here that tea was accidentally discovered by Emperor Shen Nung over 5,000 years ago. Ever since its discovery by China, tea was used only as a green tea for centuries. Hence China produces the world's finest green teas.
The tea leaves used for green tea are steamed or pan-dried immediately after picking, arresting bacterial growth and preventing oxidation. Then they are rolled by hand to squeeze out excess moisture and to release flavor enzymes. The leaves are finally fired in large driers and packed. When brewed, then turn a light green color, with a flavor that is sometimes delicate and somewhat tangy.
Green teas are rich in vitamin C. Experts contend that they stimulate the spirit better than any other blend, claiming that it improves their abilities to think and meditate for prolonged periods without fatigue.

Young Hyson
Chinese for "before the rains," Young Hyson is prepared using young leaves twisted in a long, thin style. The flavor is more full-bodied and pungent that other green teas. It has a golden liquor with a hint of sweetness. Use spring water at a temperature well below boiling.

Gunpowder tea gets its name from the appearance of the leaves, which are rolled tightly into small, round pellets. The tight roll helps Gunpowder remain fresher longer than other teas. Chinese Matcha (Powdered Tea)
Few people know that the current practice of drinking powdered and whipped tea in the Japanese tea ceremony or "Chanoyu" is actually an anachronism held over from the Song dynasty in China over 1,000 years ago. After brick tea faded from popularity in the Tang, the new way of preparing tea in the Song was to whip powdered tea to a froth with a bamboo whisk. While this practice died out in China with the Mongol invasion, it was carried on in Japan's Buddhist monasteries and is now considered a pillar of traditional Japanese culture. Today, quality Matcha is being made in China again. This tea has a slightly different character than its Japanese counterpart. Both teas have an opaque, deep green color and a thick, savory mouth feel. Both are high in caffeine. However, our Chinese Matcha is smoother, without bitterness and has a rich, fresh green vegetal taste. While this tea is excellent brewed in the traditional manner, at about half the price of the Japanese version it also has applications in smoothies or green tea ice cream. To prepare, prewarm the tea bowl with hot water then discard. Place 2/3 teaspoon of Matcha in the bowl. Gently pour in water (about 180°F) and stir or whisk to make a frothy concoction.

Peach Blossom Green is a "display" tea. It is meant to be enjoyed not only for its taste, but for its appearance as well. This tea is made from quality spring-picked leaves, then hand-tied into beautiful blossoms surrounding a central pink-dyed chrysanthemum flower. It is a fool-proof tea to prepare. Simply place an entire blossom in a glass, add hot water and enjoy. An 8-12 oz. wineglass will show the tea at its best, and is ideal for savoring its delicate taste. From Anhui province, home to the famous tea-growing region of the Huangshan mountains, comes this flavorful tea. At first glance the very dark and uniform pellets appear much like Gunpowder swirled with silver tips, but this is a very different tea. It brews tawny golden liquor with a clean and bracing flavor that can accompany meals and will not be overpowered, even by spicy foods. Bi Luo Chun Tea.
Bi Luo Chun, "Green Snail Spring"
This is one of China's rare green teas of exceptional quality known all over the world. It grows on only two mountains near Wuxi. One mountain forms a peninsula of the lake, another an island. They are often shrouded in mist, thus the leaves are especially moist and tender. Peach, apricot and plum trees are planted among the bushes. When these fruit trees bloom, the tender sprouts and buds of tea absorb the aromas to be passed on to those who drink their infusion. This rare tea is made only once a year from the tenderest shoots of the first spring flush, and the Chinese have developed special manufacturing equipment to process it. Plucking takes only the bud and a single leaf half unfurled, called the "sparrow's tongue." The leaf is full of fine white hairs. A mere pound of it contains sixty to seventy thousand leaf-bud sets. Processing is done by hand and takes great skill. The leaf is tiny and comes out spiral shaped; the brew is clear and golden and of exceeding delicacy. Since its gold medal in the first rank at the 1915 Panama Pacific Exposition it has become world famous. Tai Ping Hou Kui Green grows on the northern slopes of one range of the Huangshan Mountains.
