Oolong Teas

Meaning "black dragon" in Chinese, oolong tea is sometimes called "semi-fermented." Leaves are withered and then put through a series of light rollings. Firing halts oxidation when it is about half complete.

Organic Wuyi Oolong
This organic Chinese oolong tea from the Wuyi mountain area of Fujian province has chocolate-brown leaves that brew a deep tawny brown liquor with exceptionally smooth flavor and satisfying finish. Use 1 generous teaspoon of leaf per 6-ounce cup. Pour spring water at a temperature of 80 to 90 C. (180 to 195 F.) over the leaves, steeping two to three minutes. This tea can be resteeped.

Magnolia Oolong
This green oolong has Ti Kwan Yin-like characteristics in the dry leaf with some magnolia petals mixed in. It yields a golden tawny liquor that is sweet, buttery and smooth with a pleasant magnolia aroma. Steep at a water temperature just below boiling.

Flavorful khaki-colored pellets of oolong tea with ginseng and licorice root brew a golden brown liquor with a pleasant and satisfying taste. Use spring water at a temperature of 80 to 90 C. (180 to 195 F.) and multiple short steepings.

Ti Kwan Yin (Iron Goddess) Oolong Tea.
Ti Kwan Yin (Iron Goddess) Oolong
This poet's tea from China's Anxi Mountains in southern Fujian province is quiet and contemplative. Artists and scholars have been inspired by this tea for centuries. It's a Grade 1 tea that's an excellent choice both for ceremonies and quiet afternoons. Try it "kungfu" style in a small teapot using lots of leaf with a short steep many times. Water temperature is best just below boiling.

Flowery Oolong
This is a dramatic, bold tea with dark, long slender leaves and smooth finish which comes from China's Fujian province. With very high fragrance and a full, mouth-filling flavor, it's easy on the palate. Steep it any way you like -- it is very forgiving. Or try it "kungfu" style using lots of leaf in a small pot or gaiwan with short multiple infusions. This tea also works well over ice.

Red Hood
Red Hood grown in the rocky peaks the Wuyi mountains of Fujian province was the tea served and prepared by and for the Imperial family of the Yuan Dynasty (13th and 14th centuries). This is a lightly fermented oolong with a smooth, rich and malty character. Use spring water at a temperature of 80 to 90 C. (180 to 195 F.) and multiple short steepings.

Tieguanyin Pearls, High Grade
Rolled "pearls" unfurl into three or four leaves that include a delicate tea-leaf bud. These high grade Tieguanyin pearls, also called balls or pellets, yield a lovely aromatic brew of a tawny, golden liquor with at least three to seven infusions. The "dance of the leaf" is spectacular, and the ensuring drink always satisfying. Use spring water at a temperature of 80 to 90 C. (180 to 195 F.) and multiple short steepings.

Tieguanyin Competition Tieguanyin Competition "Monkey Picked" Oolong
This is our finest grade, monkey-picked, Tieguanyin tea from Fujian's Sand County Wuyi Mountains, revered by all tea lovers. It is slightly bitter to the palate at first, then sweet, with a fragrance which lingers. The finest kind is monkey picked. This name comes from a legend that monkeys aided kind monks in gathering the best leaves from the high tea trees. It is one of the few teas that can hold up to numerous infusions, and produces a rich golden liquor with a spicy aroma and delightful aftertaste. Water temperature is best around 180 to 190; try it using lots of leaf in a small pot or gaiwan with short multiple infusions.

Phoenix Bird Oolong (Zhong Shan Baiye) "China Mountain White Leaf"
Zhong Shan Baiye means "China Mountain White Leaf." From out of the Wuyi Hills in Guangdong province comes this exquisite oolong that brews to a dark leaf. The liquor has a mellow, satisfying flavor. Water temperature is best around 180 to 190; try it using lots of leaf in a small pot or gaiwan with short multiple infusions.

Formosan Oolong Tea.


Oolong, or black-dragon tea, is fermented to varying degrees after picking; the fermentation is then stopped by roasting of the leaves, which accounts for the darker color and more robust flavor. The taste is somewhat fruity, with a bouquet that has a spicy hint. In Taiwan, oolong is considered the top blend.

Oolong Choice
Often referred to as the "Champagne of Teas," oolong is the personal choice of professional tea tasters. Our Oolong Choice is hand picked once a year, when the flavor is at its finest. Mostly grown in the Omei area of Hsinchu county, the leaves are naturally curly with silver tips and the tender sprouts are picked during the peak of summer. Tung Ting Premium
This young leaf tea from the highest plantations above Sungpoling (Pine Bluff) is regarded as one of Taiwan's best. Grown across a hilly plateau sheltered by groves of areca palm and giant bamboo, the tender leaves and buds brew a pale golden-green cup with a supurb flavor and a subtle natural floral aroma. Jade Pouchong
Not truly a green, not wholly an oolong, pouchongs are oxidized in a unique way. They are wrapped in cloth or paper to keep the leaves moist longer during the heat-generated oxidation. The result is that most pouchongs are oxidized 12 to 18 percent. This premium pouchong is slightly sweet, delicate, and smooth. It has a very relaxing and satisfying cup. Welbeck Estate Frost Tea
This is a January tea plucked after the year's coldest nights at the height of the Nilgiri "Quality Season." Welbeck Estate Frost Tea must properly be called "oolong" although it can also be treated like a black tea. It certainly looks like a black, but with the most carefully plucked and produced leaf from India. The leaf is large -- sometimes three leaves and a bud since it had to be rolled and repeatedly fired as oolong -- unbroken, long, wiry, fragrant and flavorful, with an unmistakably high-grown lightness of body and character. Use spring water at a temperature of 80 to 90 C. (180 to 195 F.) and multiple short steepings.
