Temple of Heaven Gunpowder
Gunpowder tea gets its name from the appearance of the leaves, which are rolled tightly into small, round pellets. The tight roll helps Gunpowder remain fresher longer than other teas. This example, "Temple of Heaven," has a sweet and slightly smokey character.

Dragon Well (Lung Ching)
This hand-picked and -processed green tea from the hills just west of Hangzhou, Zhejiang province, has been famous since the eighth century. It is known for its full, round flavor, unique nutty taste, pleasant jade-green color, and wonderful aroma. Hand fired in a large wok, it takes on a flat shiny appearance. Zhejiang Mao Feng

Peach Blossom Green
Peach Blossom Green is a "display" tea. It is meant to be enjoyed not only for its taste, but for its appearance as well. This tea is made from quality spring-picked leaves, then hand-tied into beautiful blossoms surrounding a central pink-dyed chrysanthemum flower. It is a fool-proof tea to prepare. Simply place an entire blossom in a glass, add hot water and enjoy. An 8-12 oz. wineglass will show the tea at its best, and is ideal for savoring its delicate taste. Super Spiral Green
From Anhui province, home to the famous tea-growing region of the Huangshan mountains, comes this flavorful tea. At first glance the very dark and uniform pellets appear much like Gunpowder swirled with silver tips, but this is a very different tea. It brews tawny golden liquor with a clean and bracing flavor that can accompany meals and will not be overpowered, even by spicy foods.

Bi Luo Chun, "Green Snail Spring"
This is one of China's rare green teas of exceptional quality known all over the world. It grows on only two mountains near Wuxi. One mountain forms a peninsula of the lake, another an island. They are often shrouded in mist, thus the leaves are especially moist and tender. Peach, apricot and plum trees are planted among the bushes. When these fruit trees bloom, the tender sprouts and buds of tea absorb the aromas to be passed on to those who drink their infusion. This rare tea is made only once a year from the tenderest shoots of the first spring flush, and the Chinese have developed special manufacturing equipment to process it. Plucking takes only the bud and a single leaf half unfurled, called the "sparrow's tongue." The leaf is full of fine white hairs. A mere pound of it contains sixty to seventy thousand leaf-bud sets. Processing is done by hand and takes great skill. The leaf is tiny and comes out spiral shaped; the brew is clear and golden and of exceeding delicacy. Steep with water temperature well below boiling, infusing one to three minutes.

Bi Luo Chun "Green Snail Spring", Competition Grade
This is our finest Competition Grade Bi Luo Chun. The tiny wirey leaves are interspersed with white downy tips and produce a slightly sweet, velvety yellowish liquor with a lovely buttery aftertaste. Plucked very early in the season, this tea is much in demand among Shanghainese, who are aficionados of many good things. The delicate leaf appearance belies the depth of flavor to be savored in this tea, and the wet leaves show the numerous unopened buds. This tea can take multiple infusions.

Tai Ping Hou Kui Green "Houkeng Leader"
Known as the best of Anhui province's pointed green teas, Tai Ping Hou Kui Green has very long bud sets that unfurl like colorful floating flowers when infused. Since its gold medal in the first rank at the 1915 Panama Pacific Exposition it has become world famous. Tai Ping Hou Kui Green grows on the northern slopes of one range of the Huangshan Mountains. Rose Buds (Mei Gui Ya)
Beautiful and fragrant, these small purple rose buds come from from Anhui province. They are employed as a scenting and flavoring agent in everything from sauces and condiments to tea. The Chinese believe that an infusion of rose buds is beneficial to the heart and brain, and is useful in treating colds, coughs and kidney complaints. The cup has a heady floral aroma, with a liquor that is lightly sweet with a subtle smooth flavor. Use spring water at a temperature of 80° to 90° C. (180° to 195°F).

This tea from Zhejiang province is made solely from the tiny unopened buds of wild chrysanthemum flowers. It yields a golden liquor with a very spicy aroma and taste.

Chrysanthemum Flower
Chrysanthemum Flower tea is one of the few non-Camellia "teas" we sell. It is included because it is sold by tea exporters and frequently associated with tea. It consists entirely of the pale yellow blossoms dried and infused like tea. The Chinese ascribe numerous pharmacological uses for this tea. It is also used by cooks to season food.

Yin Hao
The finest of jasmine teas is Yin Hao. It comes from the counties surrounding Foochow in Fukien province, an outstanding tea-producing area. Plucked from early April to late May, the best leaf is then stored until the jasmine flowers come into bloom in August and September. It is then scented with fresh jasmine flowers up to seven times in its month of processing, and yields a sweet and perfumy cup.

Peach Blossom Green with Jasmine is a "display" tea. It is meant to be enjoyed not only for its taste, but for its appearance as well. This tea is made from quality spring-picked leaves, then hand-tied into beautiful blossoms surrounding a central pink-dyed chrysanthemum flower and scented with jasmine.

Organic Dragon Phoenix Pearl
Organic Dragon Phoenix Pearl gets its name from the visual characteristics of the tea bushes climbing the hillsides like a Dragon coming out of the water. The tea is picked in April and May and held until August and September when the finest jasmine blossoms are in bloom. Once open, the "marrying" of the jasmine flowers to the tea happens in two applications after which the jasmine petals are removed. When the petals are removed, women begin rolling each leaf and a bud into tiny pearl-sized balls. Once rolled, the tea is wrapped in silk mesh and dried by fire to set the form.
