Young Hyson Chinese for "before the rains," Young Hyson is prepared using young leaves twisted in a long, thin style. The flavor is more full-bodied and pungent that other green teas. It has a golden liquor with a hint of sweetness.
Temple of Heaven Gunpowder Gunpowder tea gets its name from the appearance of the leaves, which are rolled tightly into small, round pellets. The tight roll helps Gunpowder remain fresher longer than other teas. This example, "Temple of Heaven," has a sweet and slightly smokey character.
Organic Yunwu "Cloud Mist" This organic whole leaf tea from Jiangsu province is a classic green with a light and clean cup. The flavor is pleasant with a slightly astringent finish.

Dragon Well (Lung Ching) This hand-picked and -processed green tea from the hills just west of Hangzhou, Zhejiang province, has been famous since the eighth century. It is known for its full, round flavor, unique nutty taste, pleasant jade-green color, and wonderful aroma. Hand fired in a large wok, it takes on a flat shiny appearance. This quality tea will even steep at room temperature (takes a half hour or longer).
Organic Dragon Well (Lung Ching) Flat and long, the dry leaf has a slight chocolate aroma. The golden liquor yields a sapid brew with a pleasant nutty aftertaste.
1st Grade Dragon Well (Lung Ching) This is our first grade Dragon Well (Lung Ching). Its leaves are flat, long, and vibrant green and will yield several infusions of delicate, flowery aroma and flavor from its yellow-green liquor.

Zhejiang Mao Feng This is a popular Chinese green tea, a table-tea for enjoying that healthy everyday cup. Grown in an old established tea garden in southern Zhejiang province, this tea has a good taste and a rich green color. It is a very strong tea with lots of mileage per pot.
Bubbling Spring Rolled Green Rolled into small pellets, this deep green tea is very different from Gunpowder greens. When brewed, these pellets are transformed to reveal tender, yellow-green budsets. The dark green pellets belie the fresh sweet flavor of this tea, which makes a very drinkable, satisfying cup.
Three Cups Fragrance (San Bei Xiang) This small-leafed green tea from Zhejiang province has a golden-green liquor and a refreshing aroma. Known for its satisfying flavor with a slightly astringent aftertaste, it can stand up to multiple steepings.

Chinese Matcha (Powdered Tea) This tea has a slightly different character than its Japanese counterpart. Both teas have an opaque, deep green color and a thick, savory mouth feel. Both are high in caffeine. However, our Chinese Matcha is smoother, without bitterness and has a rich, fresh green vegetal taste.
Snow on the Pines The dry leaves look like a Gyokuro, but the dark green pine-like needles are co-mingled with many silver tips. The liquor has a smooth round finish, without any “grassy” taste.

Purple Bamboo Years ago we could detect faint hues of “purple” where the leaf meets the stem, but no longer. But there are still many budsets, and this is still a prized tea. Thousand Island Green Needle From the renowned Green Thousand Island Lake in Zhejiang province (also known as Qingxi Lake) comes this fine tea harvested in early spring and composed of beautiful green buds that stand upright in the hot spring water like so many blades of grass. The tea's fresh flavor and sweet finish are a product of this region where the water is crystal clear and the islands are interwoven with branching streams and beautiful scenery all over the lake.
Organic Emerald Sprouting This organic green tea from the Huang Mountain area of Anhui province has very long, straight, pretty bud sets with a silvery sheen which yield a delicate-colored liquor with pleasing aroma and excellent sweet flavor. It is among the earliest teas produced in the spring, and the profusion of bud-sets is evident in the brewed tea.
Golden Dragon This long, flat-leafed green tea from Zhejiang province has a nutty aroma in the dry leaf. It brews a pale liquor with a lively, mouth-filling flavor and a smooth finish.

Super Spiral Green From Anhui province, home to the famous tea-growing region of the Huangshan mountains, comes this flavorful tea. At first glance the very dark and uniform pellets appear much like Gunpowder swirled with silver tips, but this is a very different tea. It brews tawny golden liquor with a clean and bracing flavor that can accompany meals and will not be overpowered, even by spicy foods.
Bi Luo Chun, "Green Snail Spring" This is one of China's rare green teas of exceptional quality known all over the world. It grows on only two mountains near Wuxi. One mountain forms a peninsula of the lake, another an island. They are often shrouded in mist, thus the leaves are especially moist and tender. Peach, apricot and plum trees are planted among the bushes. When these fruit trees bloom, the tender sprouts and buds of tea absorb the aromas to be passed on to those who drink their infusion. This rare tea is made only once a year from the tenderest shoots of the first spring flush, and the Chinese have developed special manufacturing equipment to process it. Plucking takes only the bud and a single leaf half unfurled, called the "sparrow's tongue." The leaf is full of fine white hairs. A mere pound of it contains sixty to seventy thousand leaf-bud sets. Processing is done by hand and takes great skill. The leaf is tiny and comes out spiral shaped; the brew is clear and golden and of exceeding delicacy. Steep with water temperature well below boiling, infusing one to three minutes.
Bi Luo Chun "Green Snail Spring", Competition Grade This is our finest Competition Grade Bi Luo Chun. The tiny wirey leaves are interspersed with white downy tips and produce a slightly sweet, velvety yellowish liquor with a lovely buttery aftertaste. Plucked very early in the season, this tea is much in demand among Shanghainese, who are aficionados of many good things. The delicate leaf appearance belies the depth of flavor to be savored in this tea, and the wet leaves show the numerous unopened buds. This tea can take multiple infusions.
Premium Yunnan Bi Luo Chun "Green Snail Spring" Composed entirely of silver-tipped, spring-picked buds from Yunnan province, this tea yields a pale golden liquor, slightly vegetal and pleasantly flavorful, that lies full on the tongue with a nutty finish.
Yunnan Green, High Grade his tea from Yunnan province has green silver tips in the dry leaf. It brews a pale golden liquor with complex taste and a slightly fruity finish.

Green Sea Anemone (Lu Mudan) We call this one Green Sea Anemone because that's just what it looks like after steeping. It is a "display" tea. This tea is from southern Anhui province on a remote mountain where virtually every family grows tea. It is a fool-proof tea to prepare. Drum Mountain Clouds & Mist "Meilan Chun" The clouds and mist environment, known as yun-wu in China, is the perfect place to grow tea. This tea comes from Drum Mountain, the same fabled site where the 19th century tea explorer, Sir Robert Fortune, discovered many fine teas. The tea plant, known locally as Mei Tsan, is a very slow growing, high quality varietal. The tawny liquor has a pleasing flavor, rich finish and a lingering, sweet aftertaste. It is easy to brew and doesn't become bitter from oversteeping.
Da Hao Bian Zhen, Private Estate From the fertile shores of Lake Taihu in Wuxi province, this rare green tea has long, well-formed, silver-tipped needles and fresh green fragrance in the dry leaf. It yields a pale golden liquor with a delicate vegetal taste and smooth finish. It doesn't become bitter from oversteeping, and the leaves are good for several infusions.
Snow Lotus We call this one Snow Lotus because that's just what it looks like after steeping. Genmai Cha This premium tea is made by mixing bancha and genmai (husked grains of roasted brown rice) together.
Houjicha (Roasted Bancha Tea) This tea drink is a bancha that is lightly roasted, which gives it a nutty flavor. Not at all a connoisseur tea, but a fun everyday drink that goes well with Japanese foods, particularly sukiyaki or any food strongly flavored with soy sauce. Its liquor is a tawny brownish color with a smoky taste. Although best when served hot, it also can be served cool but not cold. It is excellent at nighttime, as it is very light and low in caffeine.
Sencha Fukujya (Green Spider Leg) Sencha is the most popular Japanese tea. It is made by sterilizing the leaves with steam to prevent oxidation. The leaves are then rolled to remove juices and enzymes sealed within, dried with warm air and then rolled into tiny, dark green needle-shaped pieces with a shiny or semi-polished appearance. The infusion has a slightly astringent quality.
Jo Genmai Cha (Excellent Grade Genmai) This Japanese tea is a half-rice blend (popped Genmai rice and glutinous rice) and half-sencha. It has a wonderful, delicate, salty, toasted flavor.
Organic Green Kukicha This organic Japanese sencha stem tea brews a dark golden-green liquor with a pleasantly mild, mouth-filling flavor and a nutty finish.
Kuki Homare (Honorable Stems) This is Holy Mountain's special Japanese sencha stem tea. It is made the same way as sencha, however instead of using the leaves, the stems are processed. It produces a clear and clean cup, fragrantly delicious and delicate with a slight astringency.
Gyokuro Asahi, (Pearl Dew) "Gyokuro" literally translated means Pearl Dew. This tea represents some of the finest non-ceremonial tea produced in Japan. This tea is grown in the Uji district of Honshu near Kyoto, where tea was first raised in the year 1200. The tea is picked from the old bushes that are protected with bamboo blinds to reduce the effects of photosynthesis. With a bright and lovely cup, this sweet and clear tea is a treat at any time.
1st Grade Gyokuro Asahi (Pearl Dew) This is our first grade Gyokuro Asahi. Only the finest top buds of the first flush of bushes are used. Everything connected with tending and making the tea is done by hand.
Jo Matcha (Excellent Powdered Tea) This is usacha used for formal Japanese tea ceremonies. First the tea leaves are harvested and separated into big leaves and small leaves. The small leaves are processed and made into a powder. This produces a tea with a smooth, thick texture, and somewhat sweet to astringent infusion, though definitely an acquired taste.
Matcha Genmai Cha This tea is made by mixing sencha and genmai (husked grains of roasted brown rice) together. This tea also mixes small green pearls of matcha, the high-quality powdered tea used in Cha No Yu, with Jo Genmai Cha to produce a uniquely delicious flavor with a chartreuse green cup. The aroma and taste of fresh grassy tea and toasted rice is in perfect balance, and sits full on the tongue.
Wakamidori Sencha "Wakamidori" literally translated means Young Green. This is our excellent special grade Japanese sencha. During harvest time the leaves are harvested not just by hand but by people experienced in carefully collecting the leaves as they ripen. Exquisitely fresh and fragrant in the dry leaf, this smooth, rich tea brews a chartreuse green cup. The fresh grassy and floral fragrance has a slight sweetness that marries well with a pleasing hint of astringency.
Zuiun Sencha "Zuiun" literally translated means Cloud. This high-grown, full-flavored sencha from Nishiyama-cho, in the western part of Hamamatsu-shi, is some of the finest tea provincial Japanese tea-growers have to offer.
Nepal Organic Kenchajanga Green The Kenchajanga tea garden is the first farmers cooperative tea estate covering nearly 94 hectars of land, lying at 1,300 to 1,800 meters in the foot hills of Mt. Kanchenjunga, which abuts the Darjeeling district in nearby India. The garden produces this high quality organic tea of the Himalayas. Fragrant in the dry leaf, the tawny-gold tea liquor has a pleasant slightly spicy taste with lively finish.
Dragonfruit & Roses Green From the tropics, dragonfruit has a bright red peel with sweet white pulp inside. In addition to dragonfruit bits in the tea, rose buds and blue mallow lend color to this green tea. Use spring water at a temperature well below boiling.
Honey Lemon Sunburst Green A traditional favorite combination of flavors brightened with a burst of sunflower petals. Use spring water at a temperature well below boiling.
Madame Butterfly Green Clean, fragrant tasting. Bits of sunflower petals and peaches give this tea a delicate aroma. Use spring water at a temperature well below boiling.
Osmanthus Green One of the famous Chinese gui hau (orange blossoms), osmanthus is used to scent pouchong tea. Quite subtle and incredible to drink alone or as a dessert tea, it is slightly sweet and has a lovely floral nose reminescent of peaches. Use spring water at a temperature of 80° to 90° C. (180° to 195° F.) and multiple short steepings.
Crème Caramel Green This Chinese green tea dotted with tiny beige caramel chunks is warmly aromatic in the dry leaf and brews a golden brown liquor with natural sweetness. It has a rich, satisfying flavor with vanilla top notes and a soft caramel finish that lingers on the palate.
Fruity Mango Green TAromatic in the dry leaf, this Chinese green tea brews a golden tawny liquor that is refreshingly flavorful with a pleasant and fruity natural sweetness.
Organic Moroccan Mint This organic green tea from China prepared for Moroccan tastes brews a flavorful medium brown liquor with refreshing minty zestiness.
Ceylon Silvertips, Private Reserve This rare private reserve Ceylonese white tea from the Qew Garden Estate of Sri Lanka's renowned Dimbula area is high-grown at 5,000 feet. The handpicked well-formed downy needles have a crisp, fresh fragrance in the dry leaf and brew a clear golden liquor with characteristic Ceylonese aroma, delicate but full flavor and a nice finish. Mutan White This spring-picked white tea from Fukien province consists of buds and leaf. It's completely processed by hand, is sweet and mild. After picking, the unrolled leaf is simply dried. The leaf shows some silver tip but is predominantly greenish-brown in color and very flat. A long steep at a low water temperature will bring out the more flavorful notes of this delightful tea.
Drum Mountain White Cloud (Gushan Baiyun) This white tea from the Fujian province is grown on the fabled "cloud-and-mist" mountain top where the intrepid English tea explorer and legend, Sir Robert Fortune, set foot in the 19th century. In his time, monks at the historic Buddist Drum Mountain Monastery traditionally grew this tea. This is a classic example of a high-grade white peony -- smooth, sweet and fragrant, with a soft nut-like flavor. It benefits from a long steep with water well below boiling.
Yunnan Silver Needle This white tea from Yunnan province consists of beautiful, long silvery needles. It yields a pale liquor with a fresh, mellow taste that stands up to repeated infusions, and benefits from a long steep with water well below boiling.

Fanciest Jasmine (Moli Huacha) From China's Fuzhou area in Fujian province comes this delightfully scented tea. The cup has a smooth fragrance of a garden in bloom, with a liquor that is lightly sweet and very smooth.
Eight Treasure Tea Eight Treasure Tea is a blend of eight of the following dry ingredients: Red Dates, Chinese Wolfberries, Dried Logans, Chrysanthemum Flowers, Rock Sugar, Dried Lily Buds, Jasmine Tea and Mai Dong (a herb for cooling the system). This combination produces a mildly sweet tea liquor with a cooling and refreshing taste, believed in China to reduce cholesterol, aid blood circulation and strengthen the body's immune system. Each individual serving contains 50g of dry ingredients.
Chè Sen (Lotus Tea) This lotus tea from Vietnam's Central Highlands is truly the tea of the Emperors with an anise, incensy bouquet. It is scented with the flowers and inner seeds of the exquisitely fragrant lotus blossom. During the evening, the lotus flower bud is carefully opened and a few grams of perfect Bác Thái or Bao Lôc tea leaves are inserted. Then the petals are gently closed.
Organic Green Jasmine This certified organic green jasmine tea has a wonderful aroma and uniform-size leaves. This uniformity reflects careful sorting and grading. A minimum of three infusions is common.
Silver Dragon Jasmine This jasmine tea leaf has very downy, silver tips with a wonderful bouquet that shows repeated scenting. Most of the flowers have been removed. It yields a golden infusion with a delicate flavor of jasmine petals and smooth finish. The tea can handle multiple infusions without becoming bitter.
Organic Jasmine Ancient Beauty This organic oolong tea from Yunnan province yields a beautiful caramel colored liquor and provides an uncommonly smooth and sweet base that balances with, but is not over-powered by the rich jasmine taste. The tea's tippy base is unusual as a pairing for jasmine but works wonderfully; to find a heavily oxidized oolong-based jasmine tea is unique.
Rose Buds (Mei Gui Ya) Beautiful and fragrant, these small purple rose buds come from from Anhui province. They are employed as a scenting and flavoring agent in everything from sauces and condiments to tea. The Chinese believe that an infusion of rose buds is beneficial to the heart and brain, and is useful in treating colds, coughs and kidney complaints. The cup has a heady floral aroma, with a liquor that is lightly sweet with a subtle smooth flavor. Use spring water at a temperature of 80° to 90° C. (180° to 195°F).
Wild Chrysanthemum Flower This tea from Zhejiang province is made solely from the tiny unopened buds of wild chrysanthemum flowers. It yields a golden liquor with a very spicy aroma and taste.
Chrysanthemum Flower Chrysanthemum Flower tea is one of the few non-Camellia "teas" we sell. It is included because it is sold by tea exporters and frequently associated with tea. It consists entirely of the pale yellow blossoms dried and infused like tea. The Chinese ascribe numerous pharmacological uses for this tea. It is also used by cooks to season food.
Yin Hao The finest of jasmine teas is Yin Hao. It comes from the counties surrounding Foochow in Fukien province, an outstanding tea-producing area. Plucked from early April to late May, the best leaf is then stored until the jasmine flowers come into bloom in August and September. It is then scented with fresh jasmine flowers up to seven times in its month of processing, and yields a sweet and perfumy cup.
1st Grade Yin Hao We now offer a 1st Grade Yin Hao. Use spring water at a temperature of 80° to 90° C. (180° to 195° F.) and multiple short steepings.
Organic High Mountain Green Jasmine (Moli Chunhao) Here is our popular Organic High Mountain Green Tea from Fujian province now scented with jasmine. The dry leaf has an intoxicating jasmine fragrance and brews a deep golden liquor with satisfying taste, floral high notes and a naturally sweet finish.
Jasmine Silver Needle "Yinzhen" This jasmine "Yinzhen" tea leaf has very long silvery, downy tips. Most of the flowers have been removed. It has a wonderful bouquet which shows repeated scenting, and produces a liquor that is truly delicious.
Peach Blossom Green with Jasmine Peach Blossom Green with Jasmine is a "display" tea. It is meant to be enjoyed not only for its taste, but for its appearance as well. This tea is made from quality spring-picked leaves, then hand-tied into beautiful blossoms surrounding a central pink-dyed chrysanthemum flower and scented with jasmine.
Organic Dragon Phoenix Pearl Organic Dragon Phoenix Pearl gets its name from the visual characteristics of the tea bushes climbing the hillsides like a Dragon coming out of the water. The tea is picked in April and May and held until August and September when the finest jasmine blossoms are in bloom. Once open, the "marrying" of the jasmine flowers to the tea happens in two applications after which the jasmine petals are removed. When the petals are removed, women begin rolling each leaf and a bud into tiny pearl-sized balls. Once rolled, the tea is wrapped in silk mesh and dried by fire to set the form.
White Flowery Pekoe with Jasmine This fine tea from Fujian province features all lavish silver buds scented with jasmine flowers. The aroma of the dry leaf is heavenly. The pale golden liquor has a pleasant natural sweetness with a lovely floral finish.
Curled Dragon Silver Tip Jasmine This tea has thick, twisted, whitish leaves laced with jasmine. It is very aromatic with a taste of liquid flower petals, soft and full on the tongue.
Double Happiness Display Tea The finest green tea leaves are hand-rolled around a deep red lily enhanced with a halo of jasmine flowers.
Twin Jasmine Display Tea Hand-tied tightly-capped white tea ball meets hot water in a 12-ounce wine glass. The result?
