Snow Sprouting Green is a hand-harvested, single-plucking tea vintage April 2016. This particular varietal has large predominantly single buds, evident in the plump, snowy white leaves. Plucking was precise and limited, with each worker picking about 3 kgs per day. The leaves have plenty of silver, as one might expect from this early plucking, and the cup gives a cheerful natural, sweet flavor. In taste, the tea’s bright and lively freshness is the first sensation, followed by soft floral aromatics and sweetness, and finishes with a subtle nuttiness. Something oxymoronic about this too: the early harvest of buds results in a delicate flavor, and yet the mouthfeel is quite lush and satisfying for a single bud tea, somewhat surprising in view of the fact that its most unusual feature is that the buds and budsets were not rolled. These buds brew an elegant cup that exemplifies the best of China's early spring, classic green teas. Use 3g (1 rounded teaspoon) dry leaves per 6 ounces spring water heated to a temperature of 175-185°, steeping 3 to 4 minutes. As you finish the cup you may notice that the tea really blooms and is even better when warm, rather than piping hot.
