The clouds and mist environment, known as yun-wu in China, is the perfect place to grow tea.  The tea plant, known locally as Mei Zhan, is a very slow growing, high quality varietal. This handmade tea is harvested from a small farm and processed "local" style.  Upon infusion the eyebrow-shaped leaves produce a deep gold liquor with fragrant aroma, a sweet grassy taste and exquisite mouth-filling flavor. It is easy to brew and doesn't become bitter from oversteeping. Use 1 rounded teaspoon (3g) dried tea leaves per 6 ounces of spring water heated to 175° to 185° F. and steep for 3-4 minutes. This tea can handle multiple infusions; add fresh hot water to the pot and increase the steeping time slightly for subsequent infusions, repeating until the flavor starts to fade.
