Hachijyuu Hachiya means “88th night” and refers to Shincha harvested on the 88th day of Spring in the old lunar calendar, a lucky day said to bring good fortune for the new year. Tea lovers believe that leaves matured for 88 days have the perfect balance of sweetness and bitterness. Use 3 grams dry weight of tea leaves (approx. 1 scant teaspoon) per 6 ounces of water heated to 170-180°F, steeping for 3 minutes. This tea can handle multiple infusions. Limited quantities available.
