Aged white tea is revered in China for its many healthy benefits. This vintage 2009 cake has a special blend of white tea from Fuding county in China's Fujian province. It brews a light golden-brown liquor with pleasant taste and soft finish, and is a good tea for drinking now or aging. Heat 6 ounces spring water to 160-170° and use 2 rounded teaspoons (3g) tea leaves, steeping for 3 minutes. Add fresh hot water to the pot and increase the steeping time slightly for each subsequent infusion until the flavor starts to fade.
