Gunpowder tea gets its name from the appearance of the leaves, which are rolled tightly into small, round pellets. The tight roll helps Gunpowder remain fresher longer than other teas. This example, "Temple of Heaven," has a sweet and slightly smokey character. Heat 6 ounces spring water to 175-185° and use 3g of dry leaves (approximately 1 teaspoon), infusing 3 to 4 minutes.
