Known as the best of Anhui province's pointed green teas, Tai Ping Hou Kui Green has very long bud sets that unfurl like colorful floating flowers when
infused. Since its gold medal in the first rank at the 1915 Panama Pacific Exposition it has become world famous. Tai Ping Hou Kui Green grows on the northern slopes of one range of the
Huangshan Mountains. Rain half the year and mist and clouds the rest, along with the shade of the northern slopes, provide ideal conditions for tender tea leaves. Use 1 rounded teaspoon (3g) dried tea leaves per 6 ounces of spring water heated to 175° to 185° F. and steep for 3-4 minutes. This tea can handle multiple infusions; add fresh hot water to the pot and increase the steeping time slightly for subsequent infusions, repeating until the flavor starts to fade.
