This superb Darjeeling from the renowned Castleton Estate is a first-flush tea with a fresh bright character and a floral scent. Castleton shows the old, classic, and traditional China Jat character that made Darjeeling’s reputation: Very finely plucked small leaf, well worked, herbaceous, “springy” green character that recalls some north China spring green tea types. Castleton may be a bit drab in appearance, less flashy than other teas that have undergone less manufacturing, but this is actually an indicator of quality: the cup shows the full flavor development and broad spectrum of mouthfeel and aroma that derive only from well worked/rolled leaf. It brews a light golden liquor with a slightly astringent aftertaste. Use 1 generous teaspoon dried leaf (3-4g) per 6-ounce cup of spring water heated to just below boiling (212°). Pour hot water over leaves and steep for 4 minutes.
