This nicely-rolled hairpoint tea vintage spring 2019 is grown in Jiang Xi province. The tea dates back to the Qing dynasty, during the reign of the Qianglong emperor, when he came across this tea. It was designated a tribute tea and the area was memorialized with a plaque indicating this honor. Processing is standard (for green teas): layering the fresh leaves in trays; withering indoors; pan-firing or de-enzyming (fixation) by dry heat; rolling; first drying, 2nd drying; followed by sorting and inspection. The aromatic dry leaves brew a pale golden liquor with a full vegetal taste and little astringency.  This tea can handle multiple infusions. Bring spring water to a temperature of 80° to 90° C. (180° to 195° F.) and use multiple short steepings, increasing the brewing time until the flavor begins to fade.
