This is a single-plucking tea consisting of high quality buds and tender budsets. After indoor withering and de-enzyming over dry heat, the still warm leaves are covered with cloth or paper for several hours or up to a day. Due to the covering, there is less evaporation or dissipation of the components in the leaves that yield aroma, eliciting a tea liquor with delicate color yet redolent with complex and lively flavor that lies full on the tongue. This tea can handle multiple infusions. Use 3 grams or one rounded teaspoon of dry leaves per 6 ounces of spring water at a temperature of 160-170°F steeping for 2 minutes and increasing the steeping time for subsequent infusions.
