Kabuse cha translates as "shaded tea", and it is very similar to Gyokuro, just with a shorter shading period. As with Gyokuro, the infusion presents a light green color and a deep, complex flavor. A high Theanine content produces a wonderful balance of umami and sweetness in this early spring 2016 tea. Use fresh spring water heated to a temperature of 140┬░F or below and 2 to 3 teaspoons of leaves per 12 oz. teapot, steeping 2-3 minutes, and increasing the steeping time for subsequent infusions until the flavor begins to fade.
