Margaret's Hope Estate is located in the Kurseong North Valley of Darjeeling. It produces a classic second flush, deep khaki-colored tea that is very aromatic in the dry leaf. This tea brews a russet-colored liquor that is bracing, perfumy of muscat and sapid with complex character that lingers on the tongue. Use 1 generous teaspoon dried leaf (3-4g) per 6-ounce cup of spring water heated to just below boiling (212°), steeping for 3-5 min., increasing steeping time on subsequent cups until the flavor begins to fade.
