Shin Cha, "new tea" in Japanese, is the very first cut of green tea of the season.  During the wintertime, tea plants absorb to stock nutrients from soil. When the spring arrives, tea plants begin to sprout and show the amazing color of vibrant green. Only the tea harvested in early spring is traditionally called Shin Cha and it is the most sought-after seasonal tea in Japan. Shin Cha is believed to contain much more Theanine, the component of sweetness, than regular sencha. Enjoy the fragrant taste of spring!  Use 3 grams dry weight of tea leaves (approx. 1 scant teaspoon) per 6 ounces of water heated to 170-180°F, steeping for three minutes.  This tea can handle multiple infusions.  Limited quantities available.
